My son loves Broccoli Alfredo.... I thought I would share this recipe with you. :) If you missed the post yesterday regarding shopping at Aldi's, you may want to take a peek.
Broccoli Fettucini Alfredo
Ingredients:
- 8oz. cream cheese, cut into small pieces – Aldi brand- cost $0.89
- ¾ Parmesan cheese – Aldi brand – cost about $0.75
- ½ cup butter, cut into small pieces – Aldi brand on sale for $1.99 – cost $0.50
- ¾ cup milk, use 2% or higher – cost about $0.20
- 1 tsp dried basil
- A pinch of nutmeg
- Black pepper to taste
- 8 oz. fettucini noodles
- Broccoli crowns – $1.49 at Aldi
Directions:
Cook the pasta in a pot of rapidly boiling water until al
dente. Drain and set aside. Clean and cut broccoli into
florets. Steam broccoli for about 5 minutes, or until done. While the
pasta and broccoli are cooking put all of the other ingredients in a
medium sized saucepan. Bring to a low boil over medium-low heat. Stir
often with a whisk until completely smooth and heated. Add broccoli to
noodles and pour sauce over top.
You can pair it with some garlic bread, also from Aldi. I think it usually runs around $1.99(?).
